Grilled Peach Crisp Sundaes with Cinnamon-Honey Drizzle

I’m divulging this mildly embarrassing information because the quartet of identically dressed tween girls in front of me—who alternated between high-pitched shrieking, hugging, and shamelessly weeping—made me realize something important.

The older we get, the less we fangirl. And I’m not just talking about obsessing over boy bands. I mean that we’re much more hesitant to express unbridled enthusiasm about anything, and that makes me a little bit sad. I understand that as “adults” we’re required to be more even-keeled than our 12-year-old selves, but there’s something to be said for FREAKING OUT every once in a while about things that we really love.

With that in mind, I’ve decided to be more present in my happiness and get a little weird when it comes to sharing my joy. Yes, I can feel you rolling your eyes at your computer screen, but bear with me here. If we get slightly more psyched about good hair days and Taylor Kitsch, maybe meeting deadlines and paying rent won’t be quite as terrible. (Maybe. I’m only on Day 1 of this intense positivity kick, but it seems to work for Katy Perry, so I’ve got high hopes.)

I know that’s not particularly profound, but it’s the truth, and I’m guessing there are plenty of you that feel the same way. So, in the spirit of happiness (and indulgence), I’d like you to join me in fangirling over this Grilled Peach Sundae with Cinnamon-Honey Drizzle.

The gloriousness of this sundae is four-fold, people. First of all, the recipe is ridiculously simple. I’m not a proponent of overly fussy desserts in general, but I’m staunchly against them during the summer months. From June-August, I believe in fresh fruit, and ice cream, and never, ever turning on my oven, which is why I’m obsessed with the grilled fruit sundae concept. All you need to pull it off is a handful of basic ingredients, a grill (or grill pan), and 7 minutes. Snaps for simplicity.

Second, this is one ridiculously sexy sundae. It’s got a rustic elegance about it that people tend to completely lose their minds over. If you like compliments even half as much as I do, you’re going to love what happens when you serve this at a dinner party. Trust me.

Third, it’s gluten-free!!! Personally, I eat lots of gluten, but I felt like I should point out this fun fact because gluten-free is so hot right now. Oh, and it’s also vegan if you use non-dairy ice cream. Hallelujah.

Most importantly, Grilled Peach Crisp Sundaes are mind-blowingly delicious. The peaches get softened and beautifully caramelized on the grill, and brushing them with olive oil and a pinch of salt lends an unexpected savory flavor that actually highlights the fruit’s natural sweetness. Grilled peaches are magical sans accoutrements, but topping them with creamy vanilla bean ice cream, crunchy granola, and warm cinnamon-infused honey takes them to a whole new level. You may actually feel compelled to weep after your first otherworldly bite, which I support.

Grilled Peach Crisp Sundaes with Cinnamon-Honey Drizzle

Cook Time: 5 minutes
Yields: 4 sundaes

Ingredients

  • 2 large ripe peaches halved and pitted
  • 1 teaspoon extra virgin olive oil
  • Kosher salt
  • 1 pint vanilla bean ice cream
  • ½ cup of your favorite granola
  • ¼ cup honey
  • ¼ teaspoon ground cinnamon

Instructions

  • Brush the cut-side of your peaches with olive oil and sprinkle with the tiniest pinch of salt.
  • Heat a lightly oiled grill or grill pan over medium-high heat. When hot, place the peaches on the grill cut-side down and cook for about 5 minutes until slightly softened with visible grill marks.
  • Meanwhile, heat a small saucepan over medium-low heat. Add the honey and cinnamon and cook for about 45 seconds, stirring regularly, until warmed through.
  • To assemble your sundaes: Put the grilled peach halves into bowls or fancy serving plates. Top each half with a scoop of vanilla ice cream, sprinkle with granola and drizzle with the cinnamon-honey. Serve immediately.
