Kiwi Kiss Cocktail

If you answered Thursday or St. Patrick’s day, you would not be wrong, but neither of those things warrants yelling on the Internet. (Unless you’re a die-hard St. Paddy’s fan, in which case I assume you are Irish, under the age of 25, or saw a leprechaun in a tree this morning.)
Today, friends, marks the start of something I’ve been waiting for since March of 2015.
No, I didn’t get a fancy television offer, meet Justin Bieber, or get whisked away on a surprise tropical vacation by my roommate. Maxim did not call about my pictorial, and as far as I know, Gronk has yet to endorse The Dude Diet. It’s so much better than any of those things!
Can you handle the suspense? Did you already guess what it is?? Are you having as much fun with this intro as I am???

Given my love of creative visualization (and mild red wine hangover), I like to think you’re somewhere inappropriate right now screaming, “It’s here!!! It’s HEEEERE!!!”

I sincerely hope Logan remembered to order my Momofuku cake…

The recipe yields four drinks, but the proportions are easily multiplied for a larger crowd, and since you just toss the ingredients in a blender, it’s the ultimate batch cocktail for spring entertaining. Easter brunch! Bridal/baby showers! Birthdays! (duh.) OOOOH, and come to think of it, these are the perfect hue for a St. Patrick’s Day sip. God, I’m really killing it this week.

Ingredients
- 4 kiwis
 - 1/3 cup fresh mint leaves
 - Juice of 1 lime
 - 1 cup light rum
 - 1 teaspoon honey or agave
 - Club soda
 
For garnish: (optional)
- Kiwi or lime rounds
 
Instructions
- Slice the kiwis in half crosswise. Scoop the flesh from each half into a blender.
 - Add the mint leaves, lime juice, rum, and honey or agave. Blend until well combined. (There will still be visible kiwi seeds, and that’s okay!) Taste, and feel free to add a little more honey or agave if necessary.
 - Divide the kiwi mixture amongst four glasses filled with ice. Top each cocktail with club soda. (I recommend 2-3 ounces per cocktail.) Garnish with a kiwi or lime round if you like.

Happy birthday week! Is this something you can make ahead, maybe just the kiwi part w/o the rum & club soda? Or will it get brown or weird after a day or 2 in the fridge?
Thanks, Annie! You could definitely make the kiwi/mint/lime puree sans rum up to a day in advance! Just give it a good shake before adding the rum and soda. I would try not to make it more than 24-36 hours in advance though or it will start to degrade.
